Add all of the ingredients except for the oil/bacon grease to a mixing bowl and mix together until well combined.
Place approximately 1 Tbsp of the oil or bacon grease into skillet to cover the bottom, and put on medium heat on the stove, and let sit until hot.
Ladle about 1/4 cup of the mixture at a time into the skillet, cook completely on one side, flip and repeat until both sides are browned and the hoe cakes are cooked through.
Repeat by adding an additional 1 Tbsp of oil or bacon grease with additional batches until the remaining batter has been used.
Notes
If you do not like the spiciness of this recipe, you cam omit the pepper flakes and they will still taste delicious!
You could also use fresh cayenne peppers, but be sure to remove the seeds and white membrane from inside to reduce the overall spiciness.
