Add in the shredded cheese and mix it together until combined.
Add in the butter and sourdough discard, and mix everything until it is just combined.
Using a spoon or a cookie scoop, place the batter into small to medium size drops onto a sheet pan lined with parchment paper or a silicone baking mat.
Let them bake for about 15 minutes.
Combine all of the ingredients for the topping and pour them over the biscuits.
