Salmon Berry Jam

Ingredients
  

  • 4 cups Fresh salmonberries (or frozen if you can’t find fresh)
  • 3 cups Granulated sugar (adjust to taste)
  • 2 tbsp Powdered fruit pectin (or lemon juice)
  • 1 tsp Lemon zest (optional for extra flavor)

Instructions
 

  • Prepare the Berries: Rinse the salmonberries under cool water and remove any stems or leaves. If some berries are overly soft, don’t worry; they’ll cook down just fine.
  • Cook the Berries: In a large saucepan, combine the salmonberries, sugar, and fruit pectin. Heat on medium, stirring occasionally, until the berries begin to break down and release their juices. This takes about 5-7 minutes.
  • Simmer and Thicken: Continue to cook the berry mixture over medium heat, stirring frequently. The jam will begin to thicken as the water evaporates and the berries break down further. Let it simmer for about 15-20 minutes or until it reaches your desired thickness. For a thicker jam, cook it slightly longer.
  • Test and Adjust: To test if the jam is ready, place a spoonful on a chilled plate and let it sit for a moment. If it holds its shape without running, it’s done. If you’d like a more set jam, let it cook a bit longer.
  • Jar It Up: Once the jam reaches your desired consistency, pour it into sterilized jars, leaving a little room at the top. Seal the jars while the jam is still warm, and let them cool before storing in the fridge.
