Set to pressure cook and let it cook for 15 minutes. Once completed, allow it to natural release all of the pressure (usually takes around 10 - 15 min.)
Strain the liquid into another bowl and allow to sit as it cools down.
When the liquid has cooled to about room temperature, add the honey and whisk it together until fully combined. Waiting until the liquid has cooled ensures that all of the good properties of your raw honey are not killed by the heat.
Add the lemon juice (one lemon) and mix together. After you have mixed everything together, taste the liquid and add more honey if you would like it to be sweeter.
Transfer the elderberry syrup to a bottle or mason jar with a lid and refrigerate for up to 2 months.
